Tuna Bagel Nicoise Recipe
Here is a tasty recipe we found on Food Network that we wanted to share with you.
4 everything bagels
2 large eggs
1 cup green beans
2 5-ounce cans of tuna packed in olive oil
1 bunch scallions, chopped
1 small green bell pepper, diced
4 tomato slices
½ cup fresh parsley
¼ cup chopped pitted green olives
3 tablespoons extra virgin olive oil
Put the eggs in a saucepan, cover with 2 inches of cold water, bring to a simmer over medium-high heat, and cook for 8 minutes. Move the eggs to a bowl of ice water with a slotted spoon, peel, and slice.
Put the green beans, ½ cup of water, and a pinch of kosher salt in a microwave-safe bowl. Cover loosely with plastic wrap and microwave 2 to 3 minutes, until tender. Drain, rinse under cold water, and cut in half.
Drain the tuna. Mix it in a bowl with the green beans, scallions, bell pepper, parsley, olives, lemon juice, olive oil, ¼ teaspoon kosher salt, and black pepper to taste.
Slice the bagels in half and lightly toast. Layer the tomato slices, tuna salad, and hard-boiled eggs on the bottoms of the bagels and drizzle with olive oil. Cover with the bagel tops.
