Taco Bagel Bites Recipe
Here is a variation on a traditional taco recipe that we found on food.com and wanted to share with you.
10 miniature bagels, sliced in half
2-3 cups cooked ground beef
1 green pepper, diced
1 red pepper, diced
1 onion, diced
Shredded cheddar cheese
2 tablespoons taco seasoning (prepackaged or your own)
¼ cup mild or hot salsa (your preference)
Lay the bagel slices on a large cookie sheet.
Combine the ground beef, peppers, onion, cheddar cheese, taco seasoning, and salsa. Mix well.
Put 2 or 3 tablespoons of the mixture on top of each bagel slice.
Flash freeze the taco bagels on the cookie sheet for 3 hours, or until the topping is firm.
Transfer the taco bagels to a large freezer bag and freeze.
To serve, place the frozen taco bagels on a cookie sheet and bake at 350 degrees for 20 to 25 minutes, or until they are heated through and the cheese is melted.
