What You’ll Need: To create this great tasting bagel recipe you’ll need (1) cup plus (4) tablespoons of water, ½ cup of dried cranberries, 1/3 cup packed brown sugar, 4-1/2 teaspoons grated orange peel, (1) teaspoon of salt, ¼ teaspoon ground cloves, (3) cups of bread flour, (1) package active dry yeast, (1) tablespoon of sugar, (1) egg white and (1) tablespoon of cornmeal.
How to Make It: In a bread machine pan, place one cup plus two tablespoons of water, cranberries, brown sugar, orange peel, salt, cloves, flour and yeast. Select dough setting and check the dough after about five minutes of mixing. Add one to two tablespoons of water or flour if needed.
When the cycle is completed, turn the dough onto a lightly floured surface. Shape the dough into nine bagel balls. Push your thumb through the centers to form a hole. Stretch and shape the dough to form an even circle. Cover and let stand for ten minutes and then flatten the rings gently.
Fill a Dutch oven two-thirds full with water, add sugar and bring to a boil. Drop the bagels into the boiling water. Cook for :45 seconds, turn and cook for another :45 seconds. Remove with a slotted spoon and drain on paper towels.
Whisk egg white and remaining water and brush over the bagels. Coat a baking sheet with a cooking spray and sprinkle with cornmeal. Place the bagels roughly two inches apart on the prepared pan. Bake at 400° degrees for 18-22 minutes or until golden brown. Remove to wire racks for cooling. Enjoy!
