3 cups bread flour, plus more for kneading

1 cup oat flour

1 teaspoon salt

1 tablespoon pumpkin pie spice

1 cup warm water

2 teaspoons dry yeast

2 tablespoons sugar

¾ cup pumpkin puree

2 tablespoons milk

Toppings of your choice, such as chia seeds, sunflower seeds, oats, or cinnamon sugar

In a large bowl, combine the bread and oat flour, salt, and pumpkin spice.

Add the water, yeast, and sugar to the bowl of a stand mixer and allow the mixture to sit until it is slightly foamy.

Add the pumpkin puree to the stand mixer and mix with a dough hook. Slowly add the flour mixture and mix for 5 minutes or until smooth. If the dough feels sticky, add another 3 or 4 tablespoons of flour.

Form the dough into a ball and place it in a large, lightly greased bowl. Cover the dough and allow it to sit for about an hour, until it has doubled in size.

Remove the dough from the bowl. Punch it down and divide it into 9 circular pieces.

Press your finger through the center of each ball to create a bagel shape. Put the bagels on a lightly greased surface and let them rest for 10 to 15 minutes.

Fill a saucepan or Dutch oven two-thirds full with water and bring it to a boil.

Add the bagels to the water two or three at a time and boil them for about 45 seconds per side. Remove them with a slotted spoon and drain them on paper towels.

Put the bagels on baking sheets, brush them with milk, and add the toppings. Bake at 400 degrees Fahrenheit for 15 to 20 minutes, until golden brown.
