Pressed Bagel Sandwich Recipe
Here is a tasty recipe we found on Food Network and wanted to share with you.
3 ounces low-fat cream cheese, softened
2 teaspoons capers
2 teaspoons chopped fresh chives
2 teaspoons chopped fresh dill
2 whole grain bagels
4 ounces smoked salmon, thinly sliced
2 large tomato slices
¼ red onion, thinly sliced
Combine the cream cheese, capers, chives, and dill in a small bowl and set aside.
Cut a thin slice from the top and bottom of each bagel with a serrated knife. You can save the bagel scraps to make homemade bread crumbs. Then slice the bagels in half horizontally.
Spread 2 teaspoons of the cream cheese mixture on each bagel half, then top with the salmon, tomato slices, onion, and cucumber.
Cook the sandwiches in a Panini press or nonstick skillet until they are toasted on both sides.
