Lemon Pepper Summer Bagels

What you’ll need:

1 cup raw cashews

1 cup raw walnuts

¾ cup soy milk (plain or vanilla)

½ lemon

4-7 dashes of fine black pepper and 2-3 pinches of salt

Also include some tomato slices, onions and, of course, a poppy seed bagel.

OK, soak the raw cashews in salted water until tender. Drain and rinse the soaked cashews. Add them to a Vitamix or food processor. Then add the lemon, soy milk and half of the walnuts.

Blend from high to low for a few minutes until the mix is smooth. Add salt and pepper to taste.

Now, toast your poppy seed bagel to your desired degree and add the spread, tomatoes, onions and other vegetables. Great for a light summer snack, this bagel recipe is perfect.
