Huevos Rancheros on Bagels
Huevos rancheros are ranch-style eggs that can be made in a number of ways. This Mexican dish usually involves fried eggs served over tortillas with salsa. Here is a recipe for huevos rancheros on bagels that we wanted to share with you.
2 large plain bagels, sliced in half
¼ cup Mexican blended shredded cheese
1 cup salsa
1 tablespoon chopped fresh cilantro
Ancho chile powder
1 tablespoon canola oil
Heat a grill pan and a large skillet to medium heat.
Pour the salsa into a small saucepan and heat slowly over low heat.
Brush the cut sides of the bagels lightly with canola oil. Place them in the grill pan and grill lightly.
Melt a small amount of butter in the skillet. Crack the eggs delicately in the pan. Be careful not to disturb the yolks. Sprinkle ancho chile powder on the eggs. When they are slightly brown on the bottom and well set, gently flip the eggs and cook them for 10 seconds on the yolk side. Then remove them from the pan and place them on the bagels.
Pour the warm salsa on top of the eggs and top with one tablespoon of shredded cheese. Sprinkle with cilantro and enjoy immediately.
