How to Make Homemade Bagel Bites
Bagels are not just for breakfast. You can make bagel bites with tomato sauce, cheese, and spices that make delicious snacks.
½ cup plus 3 tablespoons warm water
1 teaspoon olive oil
1 teaspoon active dry yeast
1 teaspoon granulated sugar
2 cups unbleached all-purpose flour
1 teaspoon salt
Seeds or seasonings of your choice (optional)
28-ounce can whole peeled tomatoes, drained and chopped with liquid reserved
2 cloves minced garlic or 1 tablespoon garlic powder
2 tablespoons extra virgin olive oil
1 tablespoon granulated sugar
3 tablespoons double-concentrate tomato paste
2 teaspoons dried oregano
1 teaspoon dried thyme
¼ teaspoon dried bay leaves
1 handful fresh basil, torn
Salt and pepper to taste
Cheese of your choice
Toppings of your choice: minced vegetables, jalapenos, pepperoni, finely chopped tomatoes
Put the water, olive oil, yeast, and sugar in the bowl of an electric mixer and combine with a bread hook. Let the dough stand for 10 to 15 minutes until it is foamy.
Add the flour and salt and mix on low. Raise the speed to high and knead the dough for 10 minutes until the dough forms a ball on the bread hook, pulls away from the sides, and looks shiny and elastic.
Rub a large bowl with olive oil. Place the dough ball in the bowl and turn it around to coat it with oil. Cover the dough with plastic wrap and let it rise in a warm place for about an hour until it doubles in size.
Boil a large pot of salted water, preheat the oven to 395 degrees, and line a baking sheet with a baking mat or parchment paper.
Punch down the dough and divide it into 20 balls. Make a hole in the center of each ball.
Boil the bagels for a minute, remove them with a slotted spoon, and place them on a baking sheet. If you are using seeds, sprinkle them on.
Bake the bagels for about 15 minutes, until lightly golden, then allow them to cool.
Heat the oil in a medium saucepan over medium-high heat. Add the chopped tomatoes, stir, and cook for 5 minutes. Add the seasonings, reduce the heat to a simmer, and cook for 30 minutes, stirring occasionally.
Remove the pan from the heat. Use a hand blender to puree the sauce to your desired consistency and season to taste with salt and pepper.
Use a serrated knife to cut the bagels in half. Place them on the baking sheet with the cut side up. Broil them for a few minutes until the tops are crisp and light golden.
Spread a small amount of sauce on the bagels and top with cheese and toppings. Bake them at 350 degrees for 10 to 15 minutes until the cheese is melted and bubbly.
