How to Make Delicious Blueberry Bagels
Blueberry bagels are a favorite breakfast food for many Americans. If you have some time on the weekend and want to try making your own, here is a simple recipe you can follow.
1 ¼ cups warm water
1/4-ounce packet of instant dry yeast
5 cups bread flour
2 tablespoons honey
2 teaspoons kosher salt
4 teaspoons granulated sugar
1 teaspoon cinnamon
1 cup blueberries
1 large egg

Pour 2 cups bread flour, yeast, honey, salt, sugar, and warm water into a stand mixer with a dough hook attachment and mix on the low setting. Slowly add an additional 2 cups of flour. Continue to mix on low until most of the flour has been incorporated into the dough, for about 2 minutes. Mix in the blueberries and add more flour if the dough gets wet.
Increase the speed to medium-low and mix until the dough is smooth, stiff, and elastic. This will take another 8 to 9 minutes. Add additional flour if necessary.
Form the dough into a ball, put it in a large oiled bowl, and turn the dough to coat it in oil. Place a damp towel over the bowl and allow the dough to rise in a warm place for about 20 minutes. It should be puffy and spring back when poked.
Preheat the oven to 425 degrees. Fill a saucepan with water and boil it, then reduce the heat to medium-low. Line a baking sheet with parchment paper and grease it with oil or cooking spray. Put a metal rack inside another baking sheet.
Put the dough on a dry surface and separate it into 3- or 4-ounce pieces. Roll each piece into a rope, moisten the ends with water, and press the ends together, overlapping by about an inch to form bagels. Make the holes in the center of each bagel about the size of a quarter. Place a damp towel over the bagels and let them rest for 10 minutes.
After the dough has risen a bit, stretch it to keep the holes the size of a quarter. Boil the bagels in batches for 30 seconds on each side, then put them on the baking sheet with the rack.
Combine the cinnamon and sugar. Mix the egg white and 1 tablespoon of water and brush the mixture on the bagels. Sprinkle with cinnamon and sugar. Put the bagels on the baking sheet with parchment paper 1 inch apart and bake for 15 minutes. Rotate the pan and bake for another 10 minutes. Remove the pan from the oven and let the bagels cool for 30 minutes before serving.
