Halloween Spider Bagel Pizza Bites
If you are planning a Halloween party, try this recipe for spider bagel pizza bites to serve as appetizers.
1 28-ounce can crushed tomatoes
2 tablespoons extra virgin olive oil
4 cloves chopped garlic
1 tablespoon fresh chopped oregano or 1 teaspoon dried oregano
½ teaspoon salt
½ teaspoon pepper
Pinch of crushed red pepper (optional)
8 whole wheat or regular mini bagels, sliced
6 ounces shredded mozzarella
8 pitted large black olives
8 pitted large green olives
Preheat the oven to 350 degrees Fahrenheit.
In a large pan, combine the tomatoes, oil, garlic, oregano, salt, pepper, and crushed red pepper (optional). Bring to a boil over high heat, then reduce the heat to low and simmer for about 20 minutes, stirring occasionally, until the sauce has thickened slightly.
Lay the bagel halves cut side up on a baking sheet lined with parchment paper. Spread 2 tablespoons of the sauce on each bagel half. You can refrigerate or freeze any leftover sauce. Top with 1 tablespoon of mozzarella.
Slice one olive in half lengthwise and place one half, cut side down, in the center of each bagel half to make a spider body. Slice the other olive half into 8 thin strips to make spider legs. Arrange four legs on each side of the body. Repeat with the other olives and bagels.
Bake the bagels for 10 to 12 minutes, until the pizzas are toasted and the cheese has melted.
