Gluten-Free Bagel Recipe
Many people who switch to a gluten-free diet still want to be able to enjoy their favorite foods. Here is a recipe for gluten-free bagels that we found on food.com and wanted to share with you.
2/3 cup lukewarm milk
2 tablespoons yeast
2 teaspoons sugar
1 cup potato starch
1 ½ cups cornstarch
½ teaspoon baking soda
2 teaspoons baking powder
2 teaspoons xanthan gum
1 teaspoon salt
½ teaspoon cider vinegar
Preheat the oven to 375 degrees. Boil a pot of salted water.
In a large bowl, mix the milk, yeast, and sugar until the yeast has dissolved. Then mix in the eggs.
Add the potato starch, cornstarch, baking soda, baking powder, xanthan gum, salt, and cider vinegar. Mix well to remove lumps.
Divide the dough into six disc-shaped pieces. Press a hole in the middle of each disc to create a bagel shape. Make the holes large enough to allow the dough to rise.
Put the bagels in the boiling water one at a time and cook for about one minute each. Remove from the water.
Grease a baking sheet or sprinkle it with cornmeal. Place the bagels on the sheet and bake them for 15 to 18 minutes, or until golden brown.
