Frittata Bagel Sandwich Recipe

8 slices bacon, chopped
8 ounces Italian sausage
12 large eggs
3 tablespoons half-and-half
1 cup grated asiago
1 cup grated provolone
Salt and black pepper to taste
3 ounces cream cheese (at room temperature)
¼ cup sour cream
1 ½ teaspoons Sriracha
1 scallion, minced
4 everything bagels, split and toasted
Place a rack in the middle of the oven. Set the oven to broil.
Cook the bacon in a 12-inch nonstick skillet over medium heat until crisp, 4 to 5 minutes. Set aside.
Cook the sausage until well browned, about 6 minutes. Break it up while it cooks. Set the sausage aside with the bacon. Discard all but 1 or 2 tablespoons of fat.
Whisk the eggs and mix in the half-and-half. Pour the egg mixture into the pan, stir the eggs with a rubber spatula, and scrape and tilt the pan so the egg mixture covers the bottom. Cook 2 to 3 minutes, until the bottom is set and the top is still wet.
Add the cooked bacon, sausage, and cheeses and season with salt and pepper. Press the ingredients into the eggs with a spatula.
Place the pan in the oven and cook 2 to 4 minutes, until the eggs are puffed up and lightly golden on top. Remove the frittata from the oven and let it rest for 5 minutes.
Mix the cream cheese, sour cream, Sriracha, and scallions in a bowl and season with salt and pepper.
Slide the frittata onto a cutting board. Use a 3 ½ or 4 inch cookie cutter to cut the frittata into round pieces.
Place a frittata round on each bagel. Top with sauce.
