How Is Pastrami Made?

Pastrami is popular in delis all over the United States. It is usually made from beef, but it can also be made from other types of meat, including pork, mutton, and turkey.

Pastrami was invented to preserve meat before modern refrigeration became available. Raw meat is brined and partially dried. It is then seasoned with a variety of herbs and spices, smoked, and steamed for that distinctive flavor that pastrami lovers enjoy.

History of the Pastrami Sandwich

Pastrami was a specialty in Romania. It was introduced to the United States by Romanian Jewish immigrants in the second half of the 1800s. The word was originally spelled “pastrama” in English, but it was later changed to “pastrami.”

Sussman Volk, a New York kosher butcher, created the first pastrami sandwich in 1887. His sandwich was so popular that he converted his butcher shop into a restaurant to serve pastrami sandwiches.

Variations on the Pastrami Sandwich

To make a classic New York deli sandwich, pastrami is usually sliced and served hot on rye bread. It is sometimes served with coleslaw and Russian dressing. Another variation is the Rachel sandwich, which combines pastrami and coleslaw. In Los Angeles, pastrami is served hot right after it is removed from the steamer. It is cut into very thin slices when it is still wet from the brine and is served on double-baked Jewish rye bread with yellow mustard and pickles. Local burger chains in Utah serve hamburgers topped with pastrami and a sauce in a variation introduced by Greek immigrants in the 1960s.
