Blueberry Lemon Cheese Bagel Recipe
If you are searching for a unique breakfast that is a departure from the traditional egg sandwich, here is a recipe for a blueberry lemon cheese bagel.
1 bagel, sliced
1 handful of blueberries
1 cup sugar
1 teaspoon water
2 tablespoons Mascarpone cheese
1 ½ teaspoons lemon curd
Toast the bagel. While the bagel is toasting, put the blueberries, sugar, and water in a small pan over medium-high heat. Heat until the sugar has dissolved and the blueberries are starting to leak their purple color, about 1-2 minutes. Remove the pan from the stove.
Cut each bagel slice in half. Spread Mascarpone on the two bottom halves. Dot with lemon curd and drizzle with the blueberry mixture. Place the remaining slices on top.
