Bagel Sandwiches with Lox and Cream Cheese

¾ cup cream cheese at room temperature
1 tablespoon chopped capers
1 tablespoon chopped parsley
1 teaspoon lemon juice
½ teaspoon salt
½ teaspoon white pepper
8 slices smoked salmon
4 bagels, sliced
Butter, softened
1 small red onion, thinly sliced
1 cucumber
1 tablespoon white wine vinegar
1 teaspoon sugar
1 teaspoon chopped fresh dill
½ teaspoon salt


To make the dilled cucumber, peel the cucumber, split lengthwise, remove the seeds, and thinly slice. Mix in a bowl with the white wine vinegar, sugar, dill, and salt. Marinate in the refrigerator for an hour.

Mix the cream cheese, capers, parsley, lemon juice, salt, and pepper in a small bowl. Arrange two slices of salmon in a cross on a flat surface. Put ¼ of the cream cheese mixture in the center and fold the flaps to form a 2” x 2” package. Repeat with the rest of the salmon and cream cheese mixture.

Spread butter on each bagel half. Put one salmon package on each bagel. Top with dilled cucumber and red onion. Top with the other bagel halves to make sandwiches.
