Bagel French Toast Casserole Recipe
If you are looking for a twist on classic French toast that you can prepare in advance and pop in the oven on a busy morning like Christmas, try this bagel French toast casserole. Your family is sure to love it.
2 cinnamon raisin or blueberry bagels
3 wedges Laughing Cow cheese
3 eggs or ¾ cup egg substitute
½ cup milk
½ teaspoon vanilla
2 tablespoons maple syrup
1/4 cup chopped pecans
Slice the bagels and spread them with Laughing Cow cheese. Cut each half into eight pieces. Spray an 8”x8” pan with non-stick cooking spray. Place the bagel pieces in the pan cut side down.
Mix the eggs or egg substitute, milk, vanilla, and maple syrup in a small bowl. Pour the mixture over the bagels and sprinkle with chopped pecans.
Cover the dish with foil and refrigerate it overnight. Remove it from the refrigerator in the morning 30 minutes before baking and let it stand on a counter.
Preheat the oven to 350 degrees. Place the covered pan in the oven and bake for 30 minutes. Uncover the dish and sprinkle liberally with cinnamon sugar. Bake the casserole for another 20 to 30 minutes, or until the center is firm and the top is lightly browned. Cut and serve with warm maple syrup.
