Bagel Breakfast Club Sandwich Recipe
Most breakfast sandwiches consist of eggs, cheese, and meat, but people tend to skip vegetables. Veggies are good for you, and including them in a breakfast sandwich can be a healthy way to start the day. Try this recipe for breakfast bagel club sandwiches. You will need to look for bagels that are not pre-sliced.
4 thick bagels
½ cup cream cheese
2 tablespoons chives
1 tomato, sliced thin
4 leaves Romaine lettuce
8 ounces sliced deli turkey or ham
4 slices provolone or another cheese of your choice
Olive oil or butter
Salt and pepper
Slice the bagels into three layers and toast them.
Scramble the eggs over medium heat in a little olive oil or butter. When they are almost done cooking, add the cheese.
Combine the cream cheese and chives in a bowl. Spread cream cheese on the bottom bagel slices. Top with lettuce, tomato, and then turkey or ham.
Add the middle bagel slices and smear with cream cheese and chives. Top with the eggs and cheese. Sprinkle with salt and pepper to taste. Finish with the top bagel slices.
Cut the sandwiches in half to make them easier to handle. Enjoy!
